Homemade Pasta - The Unexpected Recipe Pairing

Homemade pasta

Pasta is one of the dishes that satisfy so easily. You can have it on its own just mixed with good olive oil and salt or a pesto. The Unexpected is the perfect wine to pair with homemade pasta that you cook in salt water and mix in some fresh chilli and olive oil. 

 

Ingredients

  • 300g white flour

  • 3 eggs

  • 5ml salt

  • 15ml olive oil

  • 3 tablespoons of water

 

Method

  1. The easiest way is to make the pasta dough in a food processor. 

  2. Place the flour, salt, oil and 1 egg in a food processor. Pulse for 30 seconds. 

  3. Add another egg and pulse again. 

  4. Add the last egg and water and mix for 1 – 2 minutes, until the dough is thoroughly mixed. 

  5. It will form a ball.  Take the dough out of the mixing bowl and knead until a ball is formed. 

  6. Cover the dough in clingwrap and let it rest for 1 hour. 

  7. At this stage you can form the pasta as you wish. 

  8. I use a pasta machine. 

  9. Slice the dough into four pieces. Gently flatten one into an oval disk. Run the dough through the Pasta Roller Attachment three times on level 1 (the widest setting).

  10. Set the dough piece onto a countertop or work surface. Fold both short ends in to meet in the center, then fold the dough in half to form a rectangle (see photo above).

  11. Run the dough through the pasta roller three times on level 2, three times on level 3, and one time each on levels 4, 5, and 6.

  12. Lay half of the pasta sheet onto the floured baking sheet and sprinkle with flour before folding the other half on top. Sprinkle more flour on top of the second half. Every side should be floured so that your final pasta noodles won't stick together.

  13. Repeat with remaining dough.

  14. Run the pasta sheets through the Pasta Cutter Attachment (pictured is the fettuccine cutter). Repeat with remaining dough. Cook the pasta in a pot of salted boiling water for 1 to 2 minutes.

  15. Mix in your favourite flavoured olive oil or pesto and serve with lots of freshly grated black pepper and fresh lemon zest.
